Hey everyone, apologies for not posting any new recipes in a while. If you’re new here I try and post one new recipe a week but I’m always busy updating older recipes. 

A little life update for you. My kitchen is being remodeled for the next two weeks and I am so excited! Getting my dream kitchen! I know what you’re thinking. Didn’t you already remodel one? That was at my old house and I had painted the kitchen cabinets and had new floors put in order to sell it. This time I’m having a company do it all which will be super nice. I plan on posting some easy recipes during this time like drink and grilling recipes. Recipes that don’t require an oven pretty much because I won’t have one. I’ll be sure to share the kitchen update when it is done. 

Ok then, on to the recipe. Pickled onions can be added on top of all your favorite foods including burgers, nachos, fish tacos, and salads. They are easy to make and don’t require very many ingredients. You probably already have the most of the ingredients already in your pantry to make them. 

How to Store Pickled Onions

To store them, place them in a jar with a lid on it or an airtight container. They get better the longer they sit in the fridge and can last for 2 to 3 weeks. 

Ingredients: 

Red onions – Use a mandolin to make thinly sliced red onions. They look more like a purple onion to me. 

Apple cider wine vinegar – I prefer the taste of apple cider vinegar over any of the other vinegar. 

Sugar – to make these zero points leave out the sugar, but the sugar gets dissolved when boiling the vinegar so they end up being zero points. 

Use your favorite sweetener in place of sugar. 

How to Pickled Red Onions 

Bring vinegar, lime juice, and sugar to boil in a small saucepan. Combine onion and jalapeño in a medium bowl.

Pour vinegar mixture over the onion mixture and let sit for at least 30 minutes. or refrigerate for up to 2 days. Store in airtight container.

Smashed Cheeseburgers – instead of caramelized onions use pickled onions instead!

Ingredients

1 small red onion 

1 cup of apple cider vinegar 

2 tablespoons of lime juice 

1 tablespoon sugar


Instructions

Thinly slice red onions using a knife or mandolin. Add them to a jar or airtight container.

Yes, there is sugar in this recipe but it gets dissolved in the vinegar and it isn’t much and that is why I don’t count it. I only use a couple of them on top of some recipe and not the whole recipe.
